There are plenty of those. It&#8217;s looking for someone who can maintain a Michelin star. That&#8217;s a different market, with different numbers.   <\/p>\n<p>In this industry, it&#8217;s the net figure that counts, because that&#8217;s the number people actually talk about. For context, here&#8217;s the gross figure next to it: <\/p>\n<ul>\n<li><strong>The young rebel, first star within reach:<\/strong> about 2,800 euros net, roughly 4,400 euros gross. At this stage, you\u2019re investing in your reputation, not in your bank account. <\/li>\n<li><strong>Once you&#8217;re settled in\u2014a Michelin star, a well-coordinated team, a kitchen that runs smoothly even without you\u2014<\/strong> you can expect to earn 3,000 to 3,300 euros net, or about 4,800 to 5,300 euros gross.<\/li>\n<li><strong>Whether you manage several outlets or have two stars in the guide:<\/strong> 4,000 to 4,500 euros net, about 6,700 to 7,700 euros gross.<\/li>\n<li><strong>And the exception, at the very top:<\/strong> 250,000 euros gross per year, and up. Anyone who makes it here hasn&#8217;t just cooked. They&#8217;ve built a brand that supports an entire restaurant.  <\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;]<\/p>\n<h2>The moment most people miss<\/h2>\n<p>A Michelin star immediately boosts your market value. It doesn\u2019t increase your salary with your current employer. That\u2019s exactly where money is being left on the table. A Michelin star is the most powerful negotiating tool in a chef\u2019s career, and the window of opportunity is short. If you let it slip by, you\u2019ll be negotiating from a weaker position two years later.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;]<\/p>\n<h2>What You Won&#8217;t Find on Your Paycheck<\/h2>\n<p>Those with a star rarely negotiate just their base salary. Housing in an expensive neighborhood, a bonus equal to one month\u2019s gross salary upon meeting targets, benefits in kind, and sometimes a car. These are factors that significantly affect actual income but don\u2019t show up in any statistics.  <\/p>\n<p>On top of that, there are things that don\u2019t show up on any invoice: private events, a paid four-hands dinner, invitations to food symposia. Those who go into business for themselves play by their own rules. A gross annual salary of between 100,000 and 350,000 euros is possible here, depending on the business model, workload, and reputation. More risk, more flexibility, and more upside potential.   <\/p>\n<p>And then there\u2019s the path that hardly anyone talks about: leaving the restaurant kitchen behind and entering the world of ultra-luxury private dining. Those who cook for wealthy families\u2014on estates or yachts\u2014operate on a scale that\u2019s virtually unattainable in a restaurant. For the very best, the big money often begins where the guide stops counting.  <\/p>\n<p>For restaurants looking to earn a star: A star costs money\u2014both to earn and to keep. Cutting corners on the chef is cutting corners on the very person who decides whether you\u2019ll receive the next award. A star isn\u2019t simply awarded.
