Restaurant Manager (gn) at a 5-star resort in Rhineland-Palatinate
We are seeking a restaurant manager with hands-on operational experience for a repositioned 5-star hotel and golf resort in Rhineland-Palatinate. The resort is situated on a prominent hilltop with sweeping views of the Rhine Valley—a place where nature, history, and modern luxury converge. Following extensive renovations, the property has just reopened, and its positioning is taking shape.
The dining options are divided into three categories: a main à la carte restaurant, a gourmet restaurant with Michelin aspirations, and a golf bistro, along with a bar, spa bistro, beer garden, and event spaces. The secluded location is both an attraction and a challenge.
Your Responsibilities
- Operational and strategic management of all food service outlets
- A service-oriented, high-quality dining experience on equal footing with the kitchen and bar staff
- Definition and implementation of service standards, procedures, and quality controls
- Development of food and beverage menus in consultation with the culinary director
- Lead and develop the service team of approximately 10 employees, with opportunities for growth
- Helping to shape the overall dining concept, as well as initiatives to boost F&B sales, guest loyalty, and events
Here’s what you should bring
- Experience as a restaurant manager or assistant manager at comparable 5-star hotels or high-end establishments
- In-depth knowledge of service standards, process optimization, and team leadership
- Collaborating with kitchen and bar teams as equals; cost analysis; responsibility for budgets and revenue
- Fluent in German and English
- A service-oriented executive with a hands-on approach; not just a manager, not the kind of chain hotel executive who relies solely on standard operating procedures
- A love of nature and a willingness to lead a team in a remote location
The house offers
- Creative freedom at a repositioned 5-star resort with Michelin aspirations
- Long-term prospects for taking on additional areas of responsibility, such as managing banquets
- Flat hierarchies, a high degree of autonomy, and an owner-managed environment with a willingness to invest
- A unique location for discerning guests with a passion for nature, golf, and fine dining
Frame
Start in the summer; a collaborative and self-directed work environment. The high altitude presents challenges for shift scheduling and recruitment.
We’re not looking for someone who just goes through the motions of following SOP manuals. We’re looking for someone who wants to make this place their own and let guests feel that at the table.
