What are you doing as a Chef de Cuisine (gn) Boutiquehotel Saison concretely
- You take over the complete culinary management of the half-board menu in the evening
- You plan the daily menu, organize the shopping and ensure efficient preparation
- You manage the kitchen team from morning mise en place to evening service
- You prepare the daily snack (cake, soup) for the afternoon buffet service
- You prepare all the fresh products for the breakfast buffet the evening before and cook the hot dishes à la minute in the morning (egg dishes, porridge)
- You ensure smooth employee catering at fixed times (08:00, 12:00 and 18:00)
- You cover around 45 guests a day, at peak times up to 60, including variations for gluten and lactose intolerant and vegetarian guests
- You ensure hygienic standards and optimize processes and quality in the kitchen
This is you
- You have completed training as a chef and ideally have experience as a head chef or sous chef
- You have experience in the upscale gastronomy or alpine hotel industry, preferably in a half-board operation
- You lead a kitchen team confidently and organize mise en place, buffet preparations and evening service in a structured manner
- You are experienced in dealing with special diets such as gluten-free, lactose-free and vegetarian
- You work in a quality-conscious, structured manner and are resilient in seasonal hotel operations
- You enjoy creating classic and modern dishes in a stylish environment
